Christmas is already far behind us. Today, we celebrate the Candlemas... but do you know why the Christians eat crepes at Candlemas?

 

There are several explanations to this tradition. The most popular theory is that making crepes with the leftover wheat from the previous year would ensure a good harvest of wheat for the current year. The tradition was to flip the first crepe in the air with one hand while holding a gold coin in the other. The gold coin was then set inside the first crepe and placed on top of an armoire. The following year, the gold coin was given to a needy person. This would help ensure the prosperity of the family. So get out your crepe pans!

 

To accompany your crepes, make your own speculoos cookie butter in a large jam jar or swing top jar. Everyone will love it!

 

To make your own cookie butter in swing top jars:

 

 

Ingredients

 

 

Easy  Cheap  10 min  2 swing top jars

 

 

First of all, gather the following ingredients:swing top jars

 

  • Speculoos cookies (one 125g package)
     
  • 300 ml of evaporated milk (small cans usually contain around 400 g). If you opt for a larger can, you can use the graduated beakers from ebottles.eu to measure the evaporated milk.
     
  • One teaspoon of cinnamon (one 10 ml measuring spoon)
     
  • One tablespoon of honey
     
  • Your choice of mini or standard size empty glass jars and lids or swing top jars.

 

We recommend making the cookie butter before making your crepes, because it needs to rest in the refrigerator after being placed in the jar.

 

 

Receipe


 

Place your speculoos cookies in a bowl and crush them into little pieces. To get an extra-smooth spread, you can also put them in the blender or food processor. You should have a crumbly mixture with tiny pieces of cookie, like in the photo below.

 

     

 

swing top jars Using a plastic graduated beaker, gradually add 300 ml of evaporated milk to the cookie crumbs, while stirring with a wooden spoon. Then add the honey and the equivalent of one 10ml measuring spoon of cinnamon. Mix until you get a smooth spread, like in the photo below showing the cookie butter in glass jars.



Then put the cookie butter in glass swing top jars and refrigerate for at least 3 hours.

 

 

Spread your homemade cookie butter on your crepes and enjoy!

 

 

 

This recipe makes enough to fill two glass swing top jars: a 350 ml jar and a 200 ml jar.  If you want to give your homemade cookie butter as gifts, you can place it in mini glass jars, or in a family-size 720 ml jar.
