Asparagus Flan

Ingredients:

 

  • Bunch of asparagus (approx. 10)

  • 2 eggs

  • 20 cl of single cream

  • 2 teaspoons of cornflour

  • Gruyere or Parmesan cheese

  • Salt and Pepper

  • Butter

     

 

Recipe:

 


Cut tips of asparagus. Plunge into boiling water for 2 minutes. Remove them.

 

 


Cut stems in short pieces. Plunge into boiling water for 8 minutes.glass jar

 

 

Drain. In a bowl, mix stems of asparagus and single cream until you have a smooth mixture.

Add eggs, cheese and the cornflour. Season and whisk together.


Butter your jars and fill them. Bake in the preheated oven for 25 minutes at 180°C.

 

 


Once baked, put the tips of asparagus on your flans.
